- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 bay leaf
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1 tsp salt (adjust to taste)
- 3 cups chicken broth
- 2 tbsp vegetable oil or butter
- Fresh parsley for garnish
Instructions
- Rinse the turkey necks under cold water and pat dry. Season with salt, black pepper, and paprika.
- Heat oil in a large skillet or Dutch oven over medium heat. Sear the turkey necks until golden brown on all sides.
- Add onions, garlic, carrots, and celery to the pan. Sauté until softened and aromatic.
- Pour in the chicken broth and add bay leaf, thyme, and cayenne pepper (if using). Stir to combine.
- Bring to a gentle boil, then reduce the heat to low. Cover and simmer for 1.5–2 hours, stirring occasionally.
- Remove the lid during the last 20 minutes to allow the sauce to reduce slightly.
- Serve hot, garnished with fresh parsley, alongside mashed potatoes, rice, or vegetables.

- For extra flavor, add smoked sausage or bacon to the dish.
- Adjust the spice level by adding more cayenne pepper or chili flakes.
