  • 1 tsp dried thyme
  • 1/2 tsp black pepper

  • 3 cups chicken broth
  • 2 tbsp vegetable oil or butter
  • Fresh parsley for garnish

Instructions

  • Rinse the turkey necks under cold water and pat dry. Season with salt, black pepper, and paprika.
  • Heat oil in a large skillet or Dutch oven over medium heat. Sear the turkey necks until golden brown on all sides.
  • Add onions, garlic, carrots, and celery to the pan. Sauté until softened and aromatic.
  • Pour in the chicken broth and add bay leaf, thyme, and cayenne pepper (if using). Stir to combine.
  • Bring to a gentle boil, then reduce the heat to low. Cover and simmer for 1.5–2 hours, stirring occasionally.
  • Remove the lid during the last 20 minutes to allow the sauce to reduce slightly.
  • Serve hot, garnished with fresh parsley, alongside mashed potatoes, rice, or vegetables.
