Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the sweet potatoes, then slice them into 1/4-inch rounds.
  • Use a waffle-cut knife or mandoline slicer to create the crisscross pattern on the sweet potato slices.
  • Soak the sweet potato slices in cold water for at least 30 minutes to remove excess starch.
  • Drain and pat the sweet potatoes dry with a paper towel.
  • Toss the sweet potato slices with olive oil, garlic powder, paprika, salt, pepper, and cornstarch.
