- 1 cup warm water
- 1 tablespoon sugar
- 2 teaspoons active dry yeast
- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- Additional sunflower or pumpkin seeds for topping (optional)
Instructions
In a small bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.
In a large mixing bowl, combine whole wheat flour, all-purpose flour, salt, sunflower seeds, and pumpkin seeds.
Pour the yeast mixture into the dry ingredients and mix until the dough comes together.
Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a damp cloth, and let rise for 1 to 1.5 hours until doubled in size.
Punch down the dough and shape it into a loaf. Place in a greased loaf pan and let rise again for 30 minutes.

Allow the bread to cool on a wire rack before slicing and serving.

- You can substitute honey or maple syrup for sugar for a touch of sweetness.
- Store the bread at room temperature for up to 3-4 days or freeze for longer storage.
