Ingredients
Scale
- 1 lb ground beef
- 1/2 lb ground pork or turkey
- 1 cup breadcrumbs or crushed crackers
- 2 large eggs
- 1/2 cup milk or broth
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/3 cup ketchup (for glaze)
- 1 tbsp Worcestershire sauce (for glaze)
- 1 tsp mustard (for glaze)
Instructions
- Combine ground meats, breadcrumbs, eggs, milk, onion, garlic, parsley, salt, pepper, and smoked paprika in a large bowl. Mix until just combined.
- Shape the mixture into a loaf and set aside.
- Heat a large skillet over medium heat with a bit of oil. Place the meatloaf in the pan and sear on all sides until browned.
- Reduce heat to low and add 1/4 cup of water or broth to the pan. Cover and simmer for 25–30 minutes, basting occasionally with the glaze.
- For the glaze, mix ketchup, Worcestershire sauce, and mustard in a small bowl. Brush over the meatloaf during the last 10 minutes of cooking.
- Let the meatloaf rest for 5 minutes before slicing and serving.
Notes
- For a gluten-free version, use gluten-free breadcrumbs or almond flour.
- You can substitute the glaze ingredients with barbecue sauce for a different flavor.
