- 6 dried guajillo peppers
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium tomatoes, chopped (or 1 tablespoon tomato paste)
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1 tablespoon vinegar (or lime juice)
- 1 cup chicken or vegetable broth (more if needed)
- Salt to taste
Instructions
- Remove the stems and seeds from the guajillo peppers.
- Toast the peppers in a dry skillet for 30 seconds per side until aromatic.
- Soak the peppers in warm water for 15-20 minutes until soft.
- While soaking, sauté the chopped onion and minced garlic in oil until softened.
- Add chopped tomatoes (or tomato paste) and cook for another minute.
- Blend the soaked peppers, sautéed onion, garlic, tomatoes, spices, and vinegar with broth until smooth.
- Strain the mixture through a fine mesh sieve for a smoother sauce.
- Pour the sauce into a pan and simmer for 10-15 minutes. Adjust the consistency if needed by adding more broth.

- Adjust the heat level by adding more or fewer peppers.
- The sauce can be stored in an airtight container in the fridge for up to a week, or frozen for up to three months.
