Description

This Frito Corn Salad is the ultimate creamy and crunchy side dish, made with corn, cheese, peppers, and salty Fritos. A perfect addition to your next summer potluck or BBQ!


Ingredients

Scale

3 cups corn (fresh, canned, or frozen and thawed)

1 red bell pepper, diced

3 green onions, chopped

1 1/2 cups shredded cheddar cheese

1/2 cup sour cream

1/2 cup mayonnaise

2 cups crushed Fritos (plus extra for garnish)

Salt and pepper to taste


Instructions

1. In a large mixing bowl, combine corn, bell pepper, green onions, and shredded cheese.

2. In a small bowl, mix together sour cream and mayonnaise until smooth.

3. Pour the dressing over the corn mixture and gently stir until evenly coated.

4. Cover and chill in the fridge for at least 30 minutes.

5. Right before serving, fold in the crushed Fritos.

6. Top with additional Fritos for extra crunch and serve immediately.

Notes

Add jalapeños or hot sauce for heat.

Swap sour cream with Greek yogurt for a lighter version.

Don’t mix Fritos until right before serving to prevent sogginess.
