Description
Bold, spicy, and ultra-comforting Fiery Chicken Ramen made with rich chicken broth, chili oil, and shredded chicken. A warming noodle bowl in under 45 minutes.
Ingredients
2 tbsp sesame oil
1 tbsp vegetable oil
4 garlic cloves, minced
1-inch fresh ginger, grated
2 tbsp chili garlic sauce or sriracha
1 tbsp soy sauce
1 tbsp rice vinegar
6 cups chicken broth
2 cups shredded cooked chicken
2 packs ramen noodles (discard seasoning)
2 soft-boiled eggs
Salt to taste
Green onions, sliced (garnish)
Sesame seeds (optional)
Chili oil or extra sriracha (to finish)
Instructions
1. In a large pot, heat sesame and vegetable oil over medium heat.
2. Add garlic and ginger. Sauté until fragrant, about 1–2 minutes.
3. Stir in chili garlic sauce, soy sauce, and vinegar. Cook for 1 minute.
4. Add chicken broth. Bring to a boil, then simmer uncovered for 15 minutes.
5. Add noodles and chicken. Cook until noodles are tender, 4–5 minutes.
6. Soft-boil eggs (if not already done), peel, and halve.
7. Taste and adjust seasoning with salt or more soy sauce.
8. Ladle into bowls. Top with eggs, green onions, sesame seeds, and chili oil.
Notes
Control spice by adjusting chili garlic sauce.
Use vegetable broth and mushrooms to make it vegetarian.
Cook noodles separately if planning to store leftovers.
