These homemade Date and Nut Energy Bars are a perfect healthy snack packed with natural sweetness and nutrients from dates, nuts, and seeds. They’re quick to make, no-bake, and perfect for on-the-go!


Ingredients

Scale
  • 1 1/2 cups Medjool dates (pitted)
  • 1 cup mixed nuts (almonds, walnuts, pistachios)
  • 1/4 cup pumpkin seeds
  • 2 tablespoons chia seeds
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • A pinch of sea salt

Instructions

  • Pit the dates and place them in a food processor. Pulse until they form a sticky paste. If the dates are dry, soak them in warm water for 10 minutes before processing.
  • Pulse the mixed nuts and seeds in the food processor until they are coarsely chopped.
  • Add the date paste, cinnamon, vanilla extract, and sea salt to the nuts and seeds. Pulse until the mixture sticks together.
  • Line a baking pan with parchment paper. Press the mixture into the pan, smoothing it evenly.
  • Chill the mixture in the refrigerator for at least one hour.
  • Once chilled, slice into bars and enjoy.

Notes

  • Store in an airtight container in the fridge for up to a week.
  • For longer storage, wrap bars individually and freeze them for up to three months.
  • Customize by adding chocolate chips, dried fruit, or other spices for extra flavor.
