Description
Crispy, golden Zucchini Fritters made with almond flour, herbs, and garlic. A healthy gluten-free and dairy-free veggie side dish perfect for dinner or snack time.
Ingredients
2 medium zucchinis, grated
½ tsp salt
2 eggs
⅓ cup almond flour (or oat flour)
2 garlic cloves, minced
2 green onions, finely sliced
2 tbsp chopped parsley or dill
¼ tsp black pepper
Olive oil or avocado oil, for frying
Instructions
1. Grate the zucchini and toss with salt. Let sit for 10 minutes.
2. Wrap zucchini in a clean kitchen towel and squeeze out excess moisture.
3. In a bowl, beat the eggs and mix in zucchini, almond flour, garlic, green onions, herbs, and pepper.
4. Heat oil in a skillet over medium heat.
5. Drop spoonfuls of batter and flatten slightly. Fry 2–3 minutes per side until golden and crispy.
6. Drain on paper towels. Serve warm with your favorite dip.
Notes
Use oat flour for nut-free version.
Add nutritional yeast for a cheesy flavor.
Reheat in oven to restore crispiness.
