  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup unsalted butter, melted

For the Cinnamon Swirl (Optional):

  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  • Make the Streusel Topping: In a small bowl, mix flour, brown sugar, cinnamon, and melted butter. Set aside.
  • Prepare the Batter: In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in sour cream and vanilla extract.
  • Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  • Assemble the Cake: Pour half of the batter into the prepared pan. Sprinkle the cinnamon swirl mixture over it. Add the remaining batter, then top with the streusel.
  • Bake: Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  • Cool & Serve: Allow the cake to cool for 10 minutes before slicing. Serve warm and enjoy!
