- 4 large eggs (separated)
- 100g (1/2 cup) granulated sugar
- 50g (1/3 cup) cake flour or all-purpose flour
- 20ml (1 1/2 tablespoons) milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar (or a pinch of salt)
Instructions
- Preheat the oven to 325°F (160°C) and line a 7-inch round pan with parchment paper.
- Separate the eggs into two bowls: whites in one, yolks in the other.
- Whip the egg whites using a mixer on medium speed until foamy. Add cream of tartar and gradually add half the sugar. Whip until stiff, glossy peaks form.
- In the bowl with the yolks, whisk the remaining sugar until pale and creamy. Add the milk and vanilla extract, whisking until smooth.
- Sift in the flour and gently fold it into the yolk mixture.
- Fold one-third of the whipped egg whites into the yolk mixture to lighten it. Gradually fold in the remaining whites until fully incorporated.
- Pour the batter into the prepared pan and lightly tap the pan on the counter to release air bubbles.
- Bake for 40-45 minutes or until the cake is golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
- Dust with powdered sugar or top with fruits before serving.
