  • 3 carrots, chopped
  • 3 celery stalks, chopped

  • 3 cloves garlic, minced
  • 1 bay leaf

  • Salt to taste
  • 6 cups chicken stock (or water)
  • 2 cups egg noodles

Instructions

  • In a large pot, combine chicken, vegetables, garlic, and chicken stock. Bring to a boil over medium-high heat.
  • Once boiling, reduce heat and simmer for 1 to 1.5 hours, skimming off any foam that rises to the surface.
  • Remove the chicken, shred the meat, and return it to the pot.
  • Add the egg noodles and cook for about 8-10 minutes, or until tender.
  • Season with salt, pepper, and lemon juice to taste.
  • Serve hot, garnished with fresh parsley if desired.
