- 6 cups chicken stock (or water)
- 2 cups egg noodles
- Fresh parsley (optional garnish)
- 1 tablespoon lemon juice (optional)
Instructions
- In a large pot, combine chicken, vegetables, garlic, and chicken stock. Bring to a boil over medium-high heat.
- Once boiling, reduce heat and simmer for 1 to 1.5 hours, skimming off any foam that rises to the surface.
- Remove the chicken, shred the meat, and return it to the pot.
- Add the egg noodles and cook for about 8-10 minutes, or until tender.
- Season with salt, pepper, and lemon juice to taste.
- Serve hot, garnished with fresh parsley if desired.
Notes
- For a richer broth, use bone-in chicken with skin.
- You can freeze leftovers for up to 3 months.
