  • 4 boneless chicken thighs (or breasts)
  • 2 medium tomatoes, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 cup green or black olives, pitted and sliced
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 medium onion, chopped
  • 12 Calabrian chili peppers, finely chopped (or 1 tsp chili paste)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  • Heat olive oil in a skillet over medium-high heat. Season the chicken with salt, pepper, and oregano, then sear the chicken for 5-7 minutes on each side until golden brown. Remove the chicken and set it aside.
  • In the same skillet, sauté the garlic and onion for 2-3 minutes until fragrant.
  • Add the bell peppers and cook for another 3 minutes.
  • Stir in chopped tomatoes, olives, Calabrian chili peppers, and herbs. Let the sauce simmer for 10 minutes.
  • Return the chicken to the skillet and cover it with the sauce. Reduce the heat and simmer for 15-20 minutes, until the chicken is cooked through.
  • Garnish with fresh basil or parsley. Serve with pasta, rice, or a green salad.

  • Adjust the amount of Calabrian chili peppers based on your preferred spice level.
  • You can substitute chicken breasts for thighs if you prefer leaner meat.
