For the cream cheese frosting:

  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • In a large bowl, beat the eggs, granulated sugar, brown sugar, oil, and vanilla extract until smooth.
  • Stir in the grated carrots and nuts (if using).
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Divide the batter evenly between the two cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  • For the frosting: Beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  • Once the cakes are completely cool, spread frosting between the layers and on top.
