  • 2 large eggs

  • ½ tsp baking powder
  • ½ tsp salt
  • Optional: ½ cup chopped nuts or chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a large bowl, mash the bananas until smooth, leaving some chunks for texture.
  • In a separate bowl, whisk together the eggs, melted butter (or oil), sugar, and vanilla extract until smooth.
  • Add the mashed bananas to the wet mixture and stir to combine.
  • In another bowl, whisk together the flour, baking soda, baking powder, salt, and optional cinnamon.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
  • If desired, fold in chopped nuts or chocolate chips.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
