- 3–4 ripe bananas
- 2 large eggs
- ¾ cup granulated sugar
- ½ cup unsalted butter (melted) or vegetable oil
- 1 tsp vanilla extract
- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- Optional: ½ cup chopped nuts or chocolate chips
- Optional: ½ tsp cinnamon (for extra flavor)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mash the bananas until smooth, leaving some chunks for texture.
- In a separate bowl, whisk together the eggs, melted butter (or oil), sugar, and vanilla extract until smooth.
- Add the mashed bananas to the wet mixture and stir to combine.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and optional cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
- If desired, fold in chopped nuts or chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Ensure the bananas are very ripe for maximum sweetness.
- For a richer flavor, add walnuts, chocolate chips, or a dash of cinnamon.
- Store at room temperature for up to 4 days, or refrigerate for longer shelf life.
