Description
These Banana Bread Cinnamon Rolls are a cozy twist on classic rolls, made with ripe bananas, filled with cinnamon sugar, and topped with luscious cream cheese frosting.
Ingredients
4 cups all-purpose flour
2 1/4 tsp instant yeast
2 medium ripe bananas, mashed
1/2 cup warm whole milk
1/4 cup granulated sugar
2 large eggs
1/4 cup unsalted butter, melted
1 tsp salt
3/4 cup brown sugar (for filling)
1 tbsp ground cinnamon
2 tbsp unsalted butter, softened (for filling)
8 oz cream cheese, softened
1 1/2 cups powdered sugar
2 tsp vanilla extract
1–2 tbsp milk (optional, for frosting consistency)
Instructions
1. Warm milk to 110°F. Stir in yeast and 1 tsp sugar. Let sit 5 minutes.
2. In a large bowl, combine mashed bananas, eggs, sugar, and melted butter. Add yeast mixture.
3. Stir in flour and salt. Knead until dough is smooth and elastic (7–10 minutes).
4. Place dough in a greased bowl, cover, and let rise 1 hour until doubled.
5. Roll dough into 12×18 inch rectangle. Spread softened butter over surface.
6. Mix brown sugar and cinnamon, then sprinkle evenly.
7. Roll tightly and slice into 12 pieces. Place in greased 9×13 pan.
8. Cover and let rise 30 minutes. Preheat oven to 350°F.
9. Bake for 25–30 minutes until golden brown.
10. Beat cream cheese, butter, powdered sugar, and vanilla until smooth. Add milk if needed.
11. Frost warm rolls and serve immediately.
Notes
Use very ripe bananas for best flavor and moisture.
Make ahead: Assemble rolls the night before and bake in the morning.
Store leftovers covered and reheat gently before serving.
