Description

These almond croissant cookies combine the delicate flakiness of croissants with the rich, nutty flavor of almonds in a simple, easy-to-make cookie. Perfect for a sweet snack or dessert.

Ingredients

Scale
  • 200 grams almond paste
  • 225 grams butter (softened)
  • 100 grams sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 250 grams all-purpose flour
  • Pinch of sal
  • Optional: Powdered sugar for dusting

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a food processor, combine almond paste, butter, sugar, eggs, and vanilla extract. Blend until smooth.
  • Gradually fold in the flour and salt to form a soft dough.
  • Roll the dough into small balls (about 1 tablespoon each) and flatten slightly.
  • Place a small spoonful of almond paste in the center of each cookie.
  • Fold the edges of the dough around the almond paste to seal it inside.
  • Bake for 12-15 minutes, or until golden brown.
  • Let cool on a wire rack. Optionally dust with powdered sugar before serving.

Notes

  • For a more indulgent treat, drizzle with a simple glaze made of powdered sugar and milk.
  • You can freeze the dough for later use. Freeze the shaped dough balls and bake directly from the freezer.
